Salted Caramel Fudge

Fudge is such a delicious and simple thing to make. It is a perfect sweet treat to share with friends and family and it also makes a lovely gift. If you are looking for a simple, creamy, and deliciously more-ish fudge recipe, this recipe is for you. As with all of my fudge recipes, this salted caramel fudge is surprisingly easy to make in the microwave!

Salted Caramel Fudge

This salted caramel fudge recipe is slightly different to my usual fudge recipes. My other recipes use a simple base of condensed milk and melted chocolate. This recipe also uses condensed milk and melted chocolate, but I have also added butter, vanilla and brown sugar to get that classic fudge-like taste and texture. To make it even easier, it is all made in the microwave. No sugar thermometers here!

The fudge is cooked in the microwave in 2 minute bursts, for a total of 8 minutes. Depending on your microwave (Mine is 800w), you may need to adjust this slightly. The fudge is ready when it starts to bubble and the sugar granules have dissolved. It couldn’t be anymore simple!

You can sprinkle some extra sea salt flakes on top of the fudge if you desire, although this is entirely optional, but I think it looks nice and adds to the theme. Make sure to keep this fudge refrigerated and it will keep for up to 10 days (if it lasts that long!).

Easy and delicious microwave salted caramel fudge

Ingredients
  

  • 100  g Butter
  • 300 g White chocolate
  • 1 Tin of Condensed milk
  • 400 g Light Brown sugar
  • tsp Vanilla extract
  • Pinch of salt
  • Sea salt for decorating (optional)

Instructions
 

  • Grease and line an 8"/20cm or 9"/23cm square tin. Set aside.
  • In a large microwaveable bowl, add the brown sugar, condensed milk, butter, vanilla and salt.
  • Place the bowl into the microwave for 2 minutes, then stir. Do this 3 more times for a total of 8 minutes, stirring every 2 minutes. The fudge will be ready when it starts to bubble and the sugar has dissolved.
  • Take the fudge out of the microwave and stir in the white chocolate until it has completely melted and the mixture is smooth.
  • Once the fudge has cooled, place it into the fridge to set for at least 3 hours. Cut into 36 squares.

Notes

I used a 800w microwave to make this recipe. You may need to adjust the timings slightly if your microwave has a different wattage.
 
The fudge is ready when the sugar has dissolved and the mixture is bubbling.
Keep refrigerated- it will last for up to 10 days.
