For the Cake:
- 1 and 1/2 cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ¾ cup buttermilk
- 1 cup chopped Cadbury caramel eggs about 8-10 eggs
For the Chocolate Glaze:
- ½ cup semisweet chocolate chips
- 2 tablespoons unsalted butter
- 2 tablespoons corn syrup
- Cadbury caramel eggs for garnish
Prepare the Cake Batter:
In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Beat in the eggs, one at a time, followed by the vanilla extract.
Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, and mix until just combined.
Fold in the chopped Cadbury caramel eggs until evenly distributed throughout the batter.
Bake the Cake:
Pour the batter into the prepared loaf pan and spread it out evenly with a spatula.
Bake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center of the cake comes out clean.
Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Prepare the Chocolate Glaze:
In a small saucepan, melt the chocolate chips, butter, and corn syrup over low heat, stirring until smooth and glossy.
Remove from heat and let the glaze cool slightly.
Glaze and Garnish the Cake:
Once the cake has cooled, pour the chocolate glaze over the top, allowing it to drip down the sides.
Garnish with additional Cadbury caramel eggs, if desired, for an extra indulgent touch.
